Mexican Meatball Casserole
- 1 lb. ground beef
- 2 hard-cooked eggs, chopped
- 1/2 c. chopped onion
- 2 Tbsp. snipped parsley
- 1 tsp. cinnamon (if desired)
- 1 tsp. salt
- 1/4 tsp. pepper
- 1 clove garlic, minced
- 1/4 c. chopped green pepper
- 2 Tbsp. butter or margarine
- 1 (15 oz.) can tomato sauce
- 3/4 c. water
- 1/2 tsp. chili powder
- 1/8 tsp. salt
- 3/4 c. Bisquick baking mix
- 3/4 c. cornmeal
- 1/2 tsp. salt
- 1 egg
- 2/3 c. milk
- Heat oven to 450u0b0.
- Mix ground beef, hard-cooked eggs, 1/4 cup onion, parsley, cinnamon, 1 teaspoon salt and pepper.
- Shape mixture into 1 inch balls; place in ungreased baking dish, 11 1/2 x 7 1/2 x 1 1/2 inches.
- Bake 8 to 12 minutes or until meatballs are brown.
