Grandma'S Lemon Merangne Pie
- 6 TBL cornstarch
- 1 1/2 cup sugar
- 1 TSP salt
- 2 1/4 cup boiling water
- 4 1/2 TBLS lemon juice
- 1 1/2 TSP lemon rind
- 3 eggs (seperated)
- 1 TBL butter
- 3 TBLS confectioners sugar
- 1/4 TSP cream of tartar
- 1/2 TSP vanilla
- Sift cornstarch, sugar, salt together. Place in pot on stove over medium heat. Slowly add and stir in boiling water. Stir until it thickens. Add lemon juice, egg yokes and rind. Remove from heat and stir until thickens. Stir in Butter. Let cool. Pour into pie crust.
- Beat egg whites until frothy. Add cream of tartar. Whip until it forms peaks. Fold in sugar.
- Put marange on top of pie and bake at 325 until it begins to brown.
