Humitas(4 To 6 Servings)

  1. Combine corn and milk.
  2. Blend on high speed 30 seconds.
  3. Add eggs, paprika, salt and pepper.
  4. Blend 15 seconds longer until smooth.
  5. In heavy 10-inch skillet, melt butter on moderate heat. When foam subsides, add onions and green pepper.
  6. Cook 5 minutes, stirring until soft, not brown.
  7. Pour in corn.
  8. Reduce heat and simmer uncovered.
  9. Stir frequently 5 to7 minutes until thickens somewhat.
  10. Stir in cheese.
  11. As soon as it melts, remove from heat. Can be wrapped in corn husks; steam like tamales.
