Humitas(4 To 6 Servings)
- 4 c. fresh corn or thoroughly defrosted
- 1/3 c. milk
- 2 eggs
- 2 tsp. paprika
- 1/2 tsp. salt
- dash of pepper
- 1/4 c. butter
- 1/2 c. coarsely chopped green onions
- 1/4 c. coarsely chopped green pepper
- 1/3 c. freshly grated Parmesan
- Combine corn and milk.
- Blend on high speed 30 seconds.
- Add eggs, paprika, salt and pepper.
- Blend 15 seconds longer until smooth.
- In heavy 10-inch skillet, melt butter on moderate heat. When foam subsides, add onions and green pepper.
- Cook 5 minutes, stirring until soft, not brown.
- Pour in corn.
- Reduce heat and simmer uncovered.
- Stir frequently 5 to7 minutes until thickens somewhat.
- Stir in cheese.
- As soon as it melts, remove from heat. Can be wrapped in corn husks; steam like tamales.
