Sweet And Sour Chicken
- 1 cup sugar
- 1 1/2 cup pineapple juice
- 2/3 cup apple cider vinegar
- 2 T soy sauce
- 1 1/3 t ground ginger
- 1 cube chicken bullion
- 2 T corn starch
- 20 oz can pineapple
- 1 green pepper
- 1 egg
- 1 lb chicken
- 1/2 cup flour
- To make chicken:
- Cut chicken into 1 inch cubes. Dip into beaten egg and place in bag with flour. Shake.
- Fry in large pan until done and crispy.
- To make sauce:
- In medium sauce pan, combine sugar, pineapple juice, vinegar, soy sauce, ginger, bullion cube. Mix corn starch with small amount of water and stir in slowly to pan. Boil for 5 to 10 minutes stirring frequently.
- When sauce and chicken is done, combine chicken and sauce in one pan and add pineapple and green pepper. Serve over rice.
