State Fair Spiedie
- Marinade
- 1/2 c olive oil
- 1/2 c red wine vinegar
- 1/2 c medium dry sherry
- juice of 2 lemons
- 3 tsp ketchup
- 1 medium onion-chopped
- 2 tbsp parsley-chopped
- 1 tbsp fresh mint-chopped
- 1 tsp rosemary
- 1 tsp white pepper
- 1 tsp paprika
- 1/2 tsp sage
- 1/2 tsp chili powder
- 1 tbsp salt
- coarsely-ground black pepper to taste
- 3 lbs meat, cut into 1 inch cubes. (Pork Shoulder and Lamb are traditional, but beef and chicken work well, too!)
- Italian hoagie rolls or pita bread
- 1. Cut meat into 1 cubes. place into large bowl.
- 2. Mix all remaining ingredients, and pour marinade over meat. Mix well to coat.
- 3. Marinate minimum 8 hours, overnight is best, stirring occasionally to ensure even coating.
- 4. Place meat on skewers, (resist the urge to put veggies on)
- 5. Cook on a grill or under the oven's broiler, no more than 5 inches away from heat source, for about 5 minutes. Turn a few times, brush with marinade while cooking.
- 6. When meat is done, slide off skewer onto italian roll or pita.
