Mocha No-Bake Bars
- Base
- 2 tsp instant coffee crystals
- 4 tsp hot water
- 1/2 cup unsalted butter
- 1/4 cup sugar
- 5 tbsp cocoa
- 1 egg (beaten)
- 1 1/4 cups graham cracker crumbs
- 1/2 cup finely chopped almonds
- 1 cup coconut
- Filling
- 4 ounces cream cheese (softened)
- 2 tbsp butter (softened)
- 4 tbsp coffee-flavored liqueur
- 4 tbsp instant vanilla pudding powder
- 2 cups confectioners' sugar
- Glaze
- 2 tsp instant coffee crystals
- 4 tsp hot water
- 4 tbsp confectioners' sugar
- 4 oz semi-sweet chocolate
- 2 tbsp butter
- Base
- Dissolve coffee crystals in hot water. Add coffee mixture, butter, sugar, and cocoa to the top of a double boiler. Stir until melted and combined. Add egg and stir to cook and thicken. Remove from heat. Stir in graham cracker crumbs, almonds, and coconut. Press firmly into an ungreased 8X8 pan. Chill while you prepare the filling.
- Filling
- Whip the cream cheese and butter with an electric mixer until soft and creamy. Add the liqueur, pudding powder and confectioners' sugar; beat until light. Spread over the bottom layer. Chill while you prepare the glaze.
- Glaze
- Dissolve the coffee crystals in the water, mix in confectioners' sugar until smooth. Melt the chocolate and butter over low heat. Add the coffee mixture, stir well. Spread over the filling. Chill completely. Serve chilled.
