Spaghetti Squash With Sausage, Onions, And Peppers
- 1 large Spaghetti Squash
- 1 lb Turkey Smoked Sausage cut into 1/2" slices
- 1/2 large Onion sliced into half rings
- 1 large Red Pepper sliced into half rings
- 1/2 tsp minced garlic
- 4-5 Sundried Tomatoes in oil cut into thin slices
- 1/2 tsp Red Pepper flakes
- 1/2 tsp basil
- 1/2 tsp oregano
- Salt and Pepper to taste
- grated Parmesan cheese
- Preheat oven to 375. Slice spaghetti squash in half and place on a baking tin in oven. Cook for 30 - 40 mins.
- While squash is cooking. Slice the onions, peppers, and sausage. Add the sundried tomatoes to a large skillet, there should be some oil still left on them to coat the pan. Heat skillet over medium to high heat and add garlic, onions, peppers, and sasauge. Stir fry while adding remaining spices. Cook until onions are translucent, peppers are soft, and mixture starts to carmelize.
- Remove spaghetti squash from oven. Pile "spaghetti" on a plate and spoon, peppers, onions, and sausage mixture over the pile. Sprinkle parmesan cheese over the top.
