Mimi'S Fondue

  1. In a bowl combine the cheeses, flour and dry mustard.
  2. In either a fondue pot or a medium pot, add the wine and bring to a slow simmer. Add large tablespoons of the cheese mix slowly, allowing each addition to melt before the next is added.
  3. Once all the cheese mix has been added & melted, stir in the dijon mustard and season with pepper to taste.
  4. Stir and keep over heat until the mixture is smooth and bubbling.
  5. You can make this recipe a day ahead and then just gently reheat it right before serving.
