Mimi'S Fondue
- 2 cups mild cheddar cheese, grated
- 2 cups sharp cheddar cheese, grated
- 1 cup parmesan, grated
- 1/4 cup flour
- 2 teaspoons dry mustard
- 2 cups white wine
- 2 teaspoons dijon mustard
- bread for dipping
- In a bowl combine the cheeses, flour and dry mustard.
- In either a fondue pot or a medium pot, add the wine and bring to a slow simmer. Add large tablespoons of the cheese mix slowly, allowing each addition to melt before the next is added.
- Once all the cheese mix has been added & melted, stir in the dijon mustard and season with pepper to taste.
- Stir and keep over heat until the mixture is smooth and bubbling.
- You can make this recipe a day ahead and then just gently reheat it right before serving.
