Simple Chicken Salad
- 4 cups diced poached chicken breast
- 1 stalk celery, diced to very small pieces
- 2 tablespoons almond slivers, chopped into small pieces
- 4 finely diced scallions
- 1 to 2 teaspoons finely chopped dill
- 1 to 2 tablespoons finely chopped parsley
- 3/4 to 1 cup mayonnaise
- 2 teaspoons lemon juice
- 1/2 teaspoon spicy mustard
- 1/2 teaspoons honey dijon dressing
- 1 to 2 teaspoons salt
- ground black pepper to taste
- In large bowl toss together chicken, celery, almonds, scallions, dill, and parsley.
- In small bowl whisk together mayo, lemon juice, the 2 mustards, salt, and pepper.
- Add mayo mixture to the bowl with the chicken and mix until combined.
- Refrigerate and serve cold.
