Mild Bean Chutney
- 1 cup diced tomatoes
- 1 cup shredded green cabbage
- 1 cup shredded carrots
- 1 cup diced green peppers
- 1/2 lemon, juiced
- 1/2 cup diced red onions
- 1 cup frozen corn, defrosted
- 1 cup frozen green peas, defrosted
- 1 teaspoon cumin
- 1 teaspoon Mrs. Dash
- 1 teaspoon garlic powder
- 1 tablespoon Dr. Fuhrman's Riesling Raisin Vinegar or red wine vinegar
- 1 cup cooked or canned kidney beans, low or no salt
- 1 cup cooked or canned chickpeas (garbanzo beans), low or no salt
- 1 cup cooked or canned black beans, low or no salt
- 25 ounces romaine lettuce, shredded
- Steam the tomatoes, cabbage, carrots, and green peppers for 10 minutes over low heat. Place in bowl and stir in lemon juice, red onions, corn, peas, spices, vinegar, and beans.
- Serve cold on top of shredded lettuce.
