Kofta
- 1 1/2 pounds ground lamb or beef (85/15)
- 6 skewers
- 1 egg, lightly beaten
- 1 Onion, finely chopped
- 2 tablespoons, chopped, flat-leaf parsley
- 1/2 teaspoon ground cinnamon
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 2 teaspoons turmeric
- 1/2 teaspoon ground all spice
- Salt and freshly ground pepper
- Mix together all the ingredients with your hands until evenly blended. Shape 1/4 cup of the
- lamb mixture around a skewer in an elongated sausage shape along the length of the skewer.
- Repeat until you have made all 6.
- Grill the Kofta over hot coals or in a broiler, turning for about 5 minutes on each side.
- Serve with yogurt blended with 1 teaspoon of lemon juice and 1 crushed garlic clove.
