Basic Old Fashioned Chow Mein

  1. slice celery-put on paper towel-dry
  2. repeat with remaining vegetables, putting each in its own pile
  3. heat oil in wok until almost smoking
  4. add garlic and salt, cook until garlic browns-remove
  5. add celery and cook on high about 30 seconds push up sides of wok
  6. add onions cook another 30 seconds-push up wok
  7. repeat with green pepper and then mushrooms-add more oil if necessary
  8. add water and soy sauce-reduce heat to medium-cover cook 2 minutes more
  9. uncover, add bean sprouts
  10. push vegetables up the side of wok, add corn starch dissolved in water to the boiking liquid on bottom of wok
  11. stir all together
  12. serve on fluffed bed of rice with chow mein noodles
  13. add onion, cook 30 seconds
