Lizzie'S Meatlump
- You will need:
- Some ground beef (about 1.5 lbs)
- One onion, chopped
- Two eggs, beaten
- Salt
- Pepper
- 1 cup plain bread crumbs
- 1 16-oz can of tomato sauce
- 3/4 cup of water
- 2 tbs white vinegar
- 2 tbs mustard
- 2 tbs brown sugar
- Mix the first six ingredients together with your hands, along with half the tomato sauce. When blended, sort of mound it into a compact, lumpy heap in a deep square casserole dish - I use Corningware. It is more of a meat lump than a true meatloaf.
- Mix together the remaining tomato sauce with the water, mustard, vinegar, and sugar. Pour it over the meat lump.
- Bake, uncovered, at 350 or 375 until done - probably about 90 minutes or so.
