Tuna Cucumber Bites
- Two large cucumbers Peeled cut into 2 inch sections and seeded -spooned out (Note that you will need to leave a small amount of seeds at bottom to retain tuna).
- 1 can water packed tuna- drained
- 1 1/2 tbls spoon mayonaise
- 1/4 cup chopped sweet onion
- 2 chopped green chiles roasted and seeded
- 2tbles chopped cilantro
- Peel the cucumbers and then cut into two-inch sections. Spoon out the seeds except enough at bottom to retain tuna filling.
- *to prepare green chiles (Hatch green chile is best), roast in oven, or on the grill for added flavor, until almost completly black. Let them cool off and then run under cold water to remove skin. Carefully pull at stem to remove with seeds on the inside.
- Mix tuna, onion, mayo in small bowl. Add cilantro and toss. Fill cucumber sections top with cilantro sprig if you choose.
