Pan Fried Halibut With Thai Green Curry
- 4 6-ounce portions Halibut, 1" thick
- Thai Green Curry Paste (Available in most supermarkets)
- 1/2 cup shelled and finely chopped salted pistachio nuts
- 1 cup Panko Breadcrumbs
- 1 Tbsp Butter
- 1 Tbsp Olive Oil
- 1 Egg
- Pat fish dry and spread with a thin layer of the Thai Green Curry Paste.
- Mix together the chopped pistachios and the Panko breadcrumbs.
- Lightly beat the egg with 1 Tbsp water.
- Dip the coated fish in the egg mixture and then the pistachio/panko mixture, pressing to coat.
- Heat frying pan over medium heat and add butter and olive oil. When hot, but not smoking, add coated fish. Fry without disturbing until browned, about 3 minutes. Turn fish over and cook until fish is just cooked through and outside is browned.
- Baby Bok Choy and steamed rice are great sides with this.
