Pan Fried Halibut With Thai Green Curry

  1. Pat fish dry and spread with a thin layer of the Thai Green Curry Paste.
  2. Mix together the chopped pistachios and the Panko breadcrumbs.
  3. Lightly beat the egg with 1 Tbsp water.
  4. Dip the coated fish in the egg mixture and then the pistachio/panko mixture, pressing to coat.
  5. Heat frying pan over medium heat and add butter and olive oil. When hot, but not smoking, add coated fish. Fry without disturbing until browned, about 3 minutes. Turn fish over and cook until fish is just cooked through and outside is browned.
  6. Baby Bok Choy and steamed rice are great sides with this.
