Sweet Shrimp In Portobello Cream
- Seasoning Mix:
- 1 1/2 tsp ground coriander
- 1 tsp each salt & pepper
- 3/4 tsp ground allspice
- 3/4 tsp cinnamon
- 3/4 tsp garlic powder
- 3/4 tsp onion powder
- 1/4 - 1/2 tsp cayenne
- 1/2 tsp ground mace
- 1/2 ground nutmeg
- Other ingredients:
- 1 pound peeled shrimp
- 4 tbl unsalted butter
- 1 c chopped onions
- 1/2 c chopped red bell pepper
- 1/2 c chopped yellow bell pepper
- 12 oz portabellos, cut into strips
- 1 tbl minced fresh garlic
- 1 tbl minced fresh ginger
- 1 c fish stock
- 1/4 c cane or pancake syrup
- 1 1/2 c heavy cream
- Combine seasoning mix in small bowl. Head a heavy pan over medium Heat. Add butter, onion, bell peppers, mushrooms, garlic, and ginger. Add seasoning mix. Cook, stirring frequently, until starts to stick to bottom of pan, about 5 mins. Add the stock. Scrape bottom of pan to loosen brown bits. Cook, stirring frequently, for 7 mins. Add the cream and cane syrup. Bring just to a boil, then reduce and simmer 10 mins. Stir in the shrimp, return heat to med-high, bring to a boil. Cook just untill shrimp are cooked.
