Chicken With Sun-Dried Tomato Cream Sauce
- 3 tablespoons Olive Oil
- 4 Boneless Chicken Breasts, pounded to tenderized
- 1 1/2 cups Heavy Cream
- 4 ounces Mascarpone Cheese
- 6 ounces Spicy Red Pesto
- 8 Sun-dried Tomatoes, drained and cut in quarters
- 2 tablespoons Basil, chopped
- 4 ounces Penne, cooked
- Season chicken with salt and pepper. Grill. Cut into bite-size pieces.
- Add cream to large saucepan and heat over medium-low heat. Add mascarpone and stir until melted and incorporated.
- Whisk in pesto and cook for 2 minutes.
- Add chicken and sun-dried tomatoes and cook for 5 minutes to marry flavors.
- Season with salt and pepper. Pour over cooked pasta.
- Garnish with chopped basil.
