Shrimp Lo Mein

  1. In a large pot of boiling water, cook noodles until just tender, 5-7 minutes. Drain and rinse under cold running water; drain well. Toss in 1 tbsp. vegetable oil.
  2. In a stir fry pan, heat 2 tbsp. vegetable oil until just smoking. Add ginger and green onion and stir fry until aromatic (about 20 seconds). Add celery and shrimp and continue to stir fry until shrimp turn pink, about 3 minutes.
  3. Add noodles, bean sprouts, soy sauce, chili paste, and chicken broth. Cook, stirring to mix and heat through, 2 minutes.
  4. Remove from heat. Season with salt and pepper to taste and drizzle with sesame oil, tossing to blend well
