Shrimp Skewers W/ Asian Pesto Sauce
- Shrimp
- soy sauce
- fresh lemons
- mint
- basil
- ginger
- garlic
- jalapino
- pine nuts
- olive oil
- balsamic vinegar
- kosher salt.
- Peel & Deein 1 lbs Large shrimp.
- MARINADE:In a blender/Food Processer puree, 3 tablespoons soy sauce,2 tablespoons fresh lemon jucie,1 tablespoon balsamic vinegar,1 tablespoon finely diced fresh ginger,2 halved large garlic gloves & 1/2 cup extra virgin olive oil. Drizzle 3 tablespoons over shimp( I try to let marinade sit for a couple hours)
- DIPPING SAUCE: Add to the marinade in the blender, 2 table spoons toasted pine nuts,1 minced jalapeno chile, 1/4 cup coursely chopped fresh basil, 1 tablespoon coursely chopped fresh mint. 1/4 teaspoon kosher salt.now cook shrimp on a skewer and serve.... Bon Appetit
