Spinach Lasagna
- 4 cups whole milk ricotta cheese
- 2 large eggs
- 2 frozen chopped spinach (10 oz each) thawed, and squeezed to remove excess moisture
- 12 lasagna noodles, cooked to pkg directions
- 1 pound mozzarella cheese (shredded)
- 1 - 28 oz jar spaghetti sauce
- Preheat oven to 400 degrees. Mix together in a small bowl, ricotta cheese, eggs, salt and pepper. Add spinach and mix well.
- Spread a small amount of the spaghetti sauce in the bottom of a 9 x 13 inch glass baking dish. Arrange a layer of lasagna noodles, then a layer of ricotta mixture, followed by 1/3 of the sauce. Repeat to make 2 more layers, ending with sauce on top. Cover with aluminum foil and bake for 30 minutes. Remove foil, top with mozzarella cheese and bake approximately 15 minutes more. Let set for 5 minutes before cutting and serving.
