Steel Cut Oat Casserole

  1. Night before:
  2. Soak the grain and nuts overnight in water, salt, a tablespoon of kefir (or yogurt), it will make them nutritionally more available.
  3. Next day:
  4. Preheat oven to 350
  5. Drain and rinse the oats and put in bowl.
  6. Blend together eggs, milks, cinnamon and vanilla until smooth
  7. Stir in fruit and oil, add mixture to grains, stir well
  8. pour into 8 x 8" greased glass pan
  9. bake for 45 minutes or until set
  10. Cut into squares, serve with milk if desired, maple syrup or other sweetner.
