Brown Soda Bread
- 2 1/2 cups whole wheat flour
- 1/2 cup all purpose flour
- 1/2 cup steel-cut oats
- 2 tbs brown sugar
- 1 tbs wheat germ
- 1tsp baking soda
- 1 tsp baking powder
- 1/2 tsp salt
- 2 cups buttermilk
- 1 lg egg lightly beaten
- 1. Preheat oven to 325 deg.
- 2. Coat a 9" X 5" or 8 1/2" X 4 1/2" loaf pan with cooking spray. Line the pan with parchment paper, and coat with cooking spray.
- 3. Combine flour and next six ingredients (through salt). Combine buttermilk and egg; add to flour mixture. Stir until just combined.
- 4. Spoon the mixture into prepared pan. Bake at 325 degrees for one hour and five minutes or until wooden toothpick inserted in center comes out clean. Inverts bread onto a wire rack; cool completely.
