Chili-Lime Potato Salad With Kielbasa
- 1 1/2 pounds Potatoes {baby}
- 1/4 teaspoon Salt
- 1/4 cup Mayonnaise
- 1/2 cup Cilantro chopped
- 1/8 teaspoon Black Pepper
- 1 Lime juice and zest
- 1/2 teaspoon Red Pepper Flakes
- 1 pound Kielbasa
- 4 Hot Dog Buns
- 1. In a large pot place potatoes in cold water and bring to a boil. Season with salt and stir. Simmer until fork tender, 10 minutes
- 2. Preheat grill or grill pan. Meanwhile, in a large bowl mix mayonnaise, cilantro, salt, pepper, lime juice and zest, and red pepper flakes. Drain and run under cold water until cooled. Toss potatoes with dressing
- 3. Cut kielbasa in half, and again in half lengthwise into 4 equal pieces. Grill kielbasa for 2 minutes on each side. Transfer to a plate and let rest for one minute
- 4. Serve kielbasa on hot dog buns with a side of potato salad; garnish with cilantro. If desired, drizzle dressing from potato salad on kielbasa and top with cilantro, or serve with your favorite condiment
