Hard Rock Cafe Chili
- 1 lb. ground chuck
- 1 large onion
- 1 green pepper
- 1/4 c. celery
- 3 cloves garlic
- 1 (4 oz.) jar pimentos, undrained
- 2 (32 oz.) jars tomatoes
- 1 to 2 Tbsp. chili powder or to taste
- 2 tsp. salt
- 1 tsp. Morton Seasons
- 1 to 2 Tbsp. packed brown sugar or to taste
- 1 can kidney beans, drained
- 1 can chili beans
- 1/2 to 1 tsp. cumin seed or to taste
- Brown meat.
- Add vegetables (onions, celery, green pepper, pimentos and garlic that have been chopped in food processor) to meat and saute a few minutes.
- In large kettle, add tomatoes, browned meat mixture, all spices and beans.
- Bring to a boil and simmer 4 to 6 hours on stove top at very low heat or place in oven and simmer at 325u0b0 same amount of time.
