Banana Oatmeal Chocolate Cookies
- Ingredients
- t cup coconut oil
- t cup sugar
- t eggs
- t teaspoon Pure Vanilla Extract
- t cups all-purpose flour (
- t cup gluten free all purpose flour
- t/2 cup almond flour
- t/2 cup coconut flour
- t/2 cup vanilla protein powder
- t teaspoon baking soda
- t teaspoon ground cinnamon
- t teaspoon ground pumpkin pie spice
- t medium ripe bananas, mashed
- t cups quick-cooking oats
- t cup (6 ounces) semisweet chocolate chips
- In a large bowl, cream coconut oil and sugar together.
- Beat in eggs and vanilla. Combine the flours, protein powder, baking soda, cinnamon
- and pumpkin pie spice; add to creamed mixture and mix well. Stir in bananas,
- oats and chocolate chips.
- Drop by rounded teaspoonfuls onto greased baking sheets. Bake at
- 375u0b0 for 10-12 minutes. Immediately remove cookies to wire racks
- to cool. Yield: about 4 dozen.
