Banana Bread
- 1 cup (2 sticks) softened (not melted) butter
- 1 1/3 cups (packed) brown sugar
- 3 eggs
- 2 tsp. vanilla
- 1/4 tsp almond extract
- 1 tsp grated orange rind
- 2 cups whole wheat flour
- 2 cups white flour
- 1 tsp. salt
- 1/2 tsp. baking soda
- 3 tsp. baking powder
- 1/4 tsp. nutmeg
- 2 tsp. ground cinnamon
- 1 1/2 cups mashed ripe banana
- 2/3 cup black coffee
- 3/4 cups chopped nuts (optional)
- 1. Preheat oven to 350.
- 2. Generously butter two loaf pans and sprinkle with sesame seeds (they'll stick to the batter).
- 3. Beat together sugar and butter. Add eggs one at a time, beating well after each. Add extracts and orange rind and beat until light in color.
- 4. Sift flours, salt, soda, baking powder, and spices together twice.
- 5. Puree bananas and black coffee together.
- 6. Add flour mixture and pureed bananas alternately to butter mixture, beginning and ending with flour (flour - banana - flour - banana - flour). After each addition mix gently to combine, but do not beat or otherwise overmix - this toughens and dries a cake. Add nuts at end, if desired.
- 7. Divide batter between pans and bake 40-50 minutes. Cool 10 minutes in the pan, then remove to finish cooling.
