Aunt Ida'S Walnut Cake
- 2 cups Sugar
- 1/2 pound Butter
- 4 cups Plain Flour
- 6 pieces Eggs
- 1 teaspoon Baking Powder
- 1 teaspoon Cinnamon
- 1 teaspoon Nutmeg
- 1 teaspoon Vanilla
- 1 pound Crystalized Cherries
- 1.5 pounds White Raisins
- 2 slices Crystalized Pineapple
- 4 cups English Walnuts
- 1 cup Cooking Sherry
- Cut cherries, raisins and pineapple into small pieces and put into a cup of Sherry and let stand overnight
- Combine vanilla, butter and sugar and mix until creamy
- Sift together all the dry ingredients and add to Sugar and butter mixture
- Add fruit and stir until combined
- Pour into a tube pan
- Bake 2hrs at 275deg
- Use straw test for doneness
