Vegetable Relish
- 12 green peppers (5 cups)
- 7 large onions (4 cups)
- 1 medium head of cabbabe (4 cups)
- 10 green tomatoes (4 cups)
- 6 sweet red peppers (1 1/2 cups)
- 1/2 cup pickling salt
- 6 cups sugar
- 2 T mustard seed
- 1 T celery seed
- 1 1/2 tsp turmeric
- 4 cups apple cider vinegar
- 2 cups water
- Wash vegetables to be used then chop. Adjust the number of vegetable to equal the measurements given. Sprinkle salt over chopped vegetables and let stand overnight. Drain and rince. Combine sugar, spices and liquids in large pot. (it doesn't say to disolve sugar before adding to vegetables, but that is how I would do it) Pour over vegetables, bring to boil and boil gently for 5 minutes. Fill hot jars leaving 1/2 inch head space. Adjust lids. Process in water bath for 5 minutes.
