Low Gi Spinach & Three Cheese Lasagna
- 1 tsp olive oil
- 1/2 medium onion (chopped)
- 1 clove garlic (crushed)
- 1 small tin (200g) chopped tomatoes
- 2 lasagne sheets
- 1 pinch dried basil
- 1 pinch of nutmeg
- 2 balls frozen spinach (thawed in advance)
- 60 g. cottage cheese
- 1/2 tbsp parmensan cheese (grated)
- 30 g. mozarella cheese
- Pre-heat the oven to 190 degrees C.
- Heat the oil in a frying pan and cook the onion and garlic until softened. Add the tomatoes and basil and simmer, uncovered, for 15 minutes.
- Defrost the spinach (a minute or two in the microwave) and press out as much water as possible. Place the cottage cheese and parmensan in a bowl and stir in the spinach and nutmeg.
- Spread 1/2 of the cheese and spinach mix over an oven-proof dish (I use a bread tin); top with a cheet of lasagne and 1/2 of the tomato sauce. Repeat to use all the ingredients, finishing with mozarella cheese (either thinly slized or grated, your preference).
- Bake for 30 minutes on 190 C, covering with foil halfway through cooking time if necessary.
