Chocolate Drop Cookies

- 1 cup sugar
- 1/2 cup butter or margarine, softened
- 1/3 Cup buttermilk
- 1 tsp vanilla
- 1 egg
- 2 oz unsweetened baking chocolate
- 1 3/4 cup flour
- 1/2 tsp baking soda
- 1/2 tsp salt
- Frosting
- 2 oz unsweetened baking chocolate
- 2 tbsp butter or margarine
- 2 cups powdered sugar
- 3 tbsp hot water
- 1. Melt 2 oz chocolate and let cool.
- 2. Beat sugar, 1/2 cup butter, buttermilk, vanilla, egg and chocolate using electric mixer on medium speed
- 3. Stir in flour, baking soda and salt
- 4. Drop dough by rounded tablespoons about 2 inches apart
- 5. Bake 8-10 minutes or until no indentation remains when touched in the center. Cool completely, about 30 minutes
- 6. In 2 quart pan, melt 2 ounces of chocolate and 2 tablespoons of butter over low heat, sitting occasionally.
- 7. Remove from heat and stir in powdered sugar and hot water until smooth. If frosting is too thick, add 1 teaspoon water at a time. If frosting is too thin, add more powdered sugar 1 tablespoon at a time.
