Pumpkin Maple Pie
- 2 tsp flour
- 2 eggs
- 4 egg whites OR 1/2 cup whites from carton
- 4 cups fresh pumpkin prepared OR 2 16 oz cans canned pumpkin
- 3/4 cup real maple syrup
- 2 tsp cinnamon
- 1 tsp allspice
- 1 tsp fresh grated nutmeg
- 1 tsp ground ginger
- 2 TB ammaretto
- 2 tsp vanilla extract
- few drops of almond extract (optional)
- 2 12oz cans non fat evaporated milk
- OR
- 1 can plus one can fat free condensed (this will yeild a thicker mix)
- Combine all ingredients and either blend in blender or mix in mixer.
- Pour into two crusts.
- Bake 15 minutes at 450
- Reduce heat to 350 and bake 35-45 minutes
- Cool before cutting.
- Each pie yeilds 8 slices.

- 240 calories
- 64% carb 11% protein 25% fat
