Sanjay'S Toasted Jarlsberg Sandwiches With (Leftover) Turkey
- 1 firm, ripe tomato
- Sea salt
- Black pepper
- 4 slices good, whole-wheat bread
- Sweet butter, softened
- 3-4 slices Jarlsberg
- 3-4 slices leftover turkey (preferably mine), shredded
- 3-4 slices good, smoked bacon, cooked & shredded
- Fresh parsley, finely chopped
- Thinly slice the tomato, and drain on paper towelling.
- Season tomato slices generously with sea salt and black pepper; set aside.
- Generously butter both sides of the bread.
- Set a heavy, non-stick skillet or griddle over medium heat.
- Arrange two slices of bread on the skillet.
- Quickly arrange the Jarlsberg on bread.
- Follow with the shredded turkey.
- Season the turkey with black pepper, to taste.
- Top with the tomato slices.
- Top with the shredded bacon.
- Sprinkle with parsley.
- Top with the remaining bread slice, and continue to cook until nicely browned.
- Using a wide spatula, flip the sandwich over, and continue to cook until nicely browned.
- Remove from heat, and serve immediately.
- If you are a little boy about ten years old, then you can have your special mug with stars on it, for your hot chocolate, and then you can tell Mummie that you love her.
- If you are a big kid, you can do it all over again.
