Biscuit Mix - Gluten Free

  1. 1. Combine rice, sorghum and amaranth flour, tapioca starch, Xanthan gum, baking powder, baking soda and salt.
  2. 2. Cut in shortening and honey until mixture resemble coarse crumbs about the size of small peas.
  3. 3. Immediately divide into 8 equal portions (about 1 1/4 C each) and seal tightly in plastic.
  4. BAKING:
  5. 1. Before baking, stir in 1/4 C liquid of choice (different flavors, etc)
  6. 2. Drop onto prepared baking sheets.
  7. 3. Bake in oven preheated to 400 degrees, for 13-15 minutes, or until tops are golden.
