Biscuit Mix - Gluten Free
- 2 C brown rice flour
- 2 C sorghum flour
- 1 C amaranth flour
- 1 C Tapioca starch
- 1/4 C honey
- 1 t xanthan gum
- 1/4 C baking powder
- 1 t baking soda
- 2 t salt
- 2 C shortening
- 1/4 liquid (milk, juice, etc)
- various dry additions (poppy seeds, orange zest,chopped nuts, dried fruit)
- 1. Combine rice, sorghum and amaranth flour, tapioca starch, Xanthan gum, baking powder, baking soda and salt.
- 2. Cut in shortening and honey until mixture resemble coarse crumbs about the size of small peas.
- 3. Immediately divide into 8 equal portions (about 1 1/4 C each) and seal tightly in plastic.
- BAKING:
- 1. Before baking, stir in 1/4 C liquid of choice (different flavors, etc)
- 2. Drop onto prepared baking sheets.
- 3. Bake in oven preheated to 400 degrees, for 13-15 minutes, or until tops are golden.
