Beef With Broccoli
- 8 oz beef sirloin
- 3/4 lb (12 oz) broccoli
- 4 oz button mushrooms
- 2 cloves garlic
- 1 T sake, dry sherry or vermouth
- 1 T rice vinegar
- 1 T sesame oil
- 1 T water
- 1 T granulated sugar
- 2 tsp cornstarch
- 1 T vegetable oil
- SLICE beef into thin, bite-sized strips. Wash broccoli and divide into florets, discarding the rest of the broccoli. Cut mushrooms in half. Peel and finely slice garlic. In a small bowl, thoroughly mix together sake, rice vinegar, sesame oil, water, sugar and cornstarch.
- HEAT vegetable oil in a wok over med-high heat. Add garlic and cook until fragrant (30 sec to 1 min).
- ADD mushrooms and saute lightly. Stir in broccoli and beef and saute to brown beef. Cover and cook until broccoli is crisp tender and beef is cooked through, about 5 minutes.
- ADD sake-cornstarch mixture and stir until sauce thickens.
