Fruit & Oatmeal Breakfast Bars
- 1 1/2 cup old-fashioned oatmeal
- 1/2 cup raw almonds
- 1/2 cup raisins
- 1/2 cup dried cranberries
- 1 packed cup dried apricots
- 3 tbsp. golden flax seeds
- 1/2 cup chunky peanut butter
- 2 tbsp honey
- 2 tsp. cinnamon
- 1 tsp. nutmeg
- 2 tsp. vanilla
- 1 tsp. almond extract
- pinch of kosher salt
- 2 tbsp. water
- Combine all ingredients in a food processor. Pulse until oatmeal and almonds are coarse textured and mixture begins to pull together. Line an 8X8 pan with aluminum foil. Press mixture flat using the bottom of a measuring cup. Cover with plastic wrap and refrigerate for several hours. Turn onto a cutting board and remove foil. Using a sharp knife, cut into 8 1" strips, then cut in half for 16 4X1 inch bars. Wrap individually in plastic wrap and refrigerate.
