Fruit & Oatmeal Breakfast Bars

  1. Combine all ingredients in a food processor. Pulse until oatmeal and almonds are coarse textured and mixture begins to pull together. Line an 8X8 pan with aluminum foil. Press mixture flat using the bottom of a measuring cup. Cover with plastic wrap and refrigerate for several hours. Turn onto a cutting board and remove foil. Using a sharp knife, cut into 8 1" strips, then cut in half for 16 4X1 inch bars. Wrap individually in plastic wrap and refrigerate.
  2. Enjoy an all-natural, healthy breakfast bar or snack!
