Blueberry Bread
- 1 1/4 c milk
- 1 tsp vanilla
- 3 T unsalted butter
- 1/4 c sugar
- 2 tsp salt
- 3 1/4-3 1/2 c flour
- 3/4 c old fashioned oats
- 2 tsp instant yeast
- 1/2 c dried blueberries, cranberries or apricots
- Topping
- 1 T melted butter
- 1 T cinnamon sugar
- Dough- Mix together all of the ingreds expect the berries and topping, till you have a smooth, elastic dough. Add he berries, kneading until they are evenly incorporated. Place the dough into lightly greased bowl and let rise till doubled, 1- 1 1/2 hours.
- Shape dough into loaf and place in greased 9x5 loaf pan. Cover the pan and let rise till dough crowns over the rim of the pan, about 1 hour. Bake in a preheated 350 oven, 40-45 minutes.
- Remove the loaf when is golden brown and firm to touch, turning it out onto cooling rack. Brush with melted butter and sprinkle with sugar.
