Buffalo Duck Wings With Blue Cheese Dip
- For Dip
- 2 tbsp chives,finely chop
- 1 tbsp worcestershire, dijon mustard
- 1/2 tbsp sherry vinegar
- 1/4 cup mayonnaise
- 1/2 tsp horseradish
- 1 1/3 cup heavy cream
- 3/4 cup gorgonzola crumbles
- 3 tbsp creme fraiche
- 1 pinch cayenne and cumin.
- salt and pepper to taste
- For Duck Wings
- 12 duck wings
- 6 qt duck fat
- 8 oz frank hot sauce
- 1 tsp smoke paprika
- 1/4 c.butter
- 2 tbsp honey
- salt
- 1) combine dip ingredients in blender and blend thoroughly
- 1) place raw duck wings and fat in a pot. simmer for 45 mins or until tender and almost fall off the bone
- 2) remove wings from fat and let it cool
- 3) toss in frank's hot sauce, a pinch of salt and smoke paprika. let marinate for 30 mins
- 4) melt butter and whisk honey until combined and set aside
- 5) put wings on hot grill until skin crisps up. before removing from grill, brush butter mixer
- 6) serve with cumin-scented blue cheese dip
