Maple Bars

  1. Dissolve yeast in water.
  2. Add sugar, salt, shortening and milk. Stir until shortening melts.
  3. When mixture has cooled to lukewarm, add eggs.
  4. Stir in 2 cups of flour.
  5. Gradually stir in 1 1/2 cups to 2 cups more flour, more if needed.
  6. Place in a greased bowl and let rise until doubled in bulk, about 2 hours.
  7. Press down and roll out on slightly floured board 1/2-inch thick in a rectangle shape. Cut with a sharp knife.
  8. Let rise uncovered to form a crust and double in bulk.
  9. Fry a few at a time in deep fat, 365u0b0, for about 3 minutes.
  10. When it rises to the surface and turns brown, turn it over and brown.
  11. Remove and drain on paper towel.
  12. When warm, spread with icing.
