Balsamic Tomato Watercress Salad
- 2 bundles of watercress, rinsed and trimmed
- 12 Campari or similar high flavor large salad tomatoes, quartered
- salt
- 2 tablespoons extra virgin olive oil
- 2 gloves garlic, minced
- 1/4 cup balsamic vinegar
- In a large skillet, heat olive oil to medium temperature. Saute minced garlic till lightly golden and flavor is infused into the olive oil. Raise temperature to high, and add salted tomatoes, continually stirring until tomatoes are heated through. Add balsamic vinegar and let it bubble till the tomatoe juices, olive oil, and balsamic vinegar starts to thicken slightly into a glaze. Toss in the watercress greens and lightly toss until coated with the vinagrette. Work quickly to prevent excessive wilting of the watercress greens. Remove to plates and serve immmediately.
