Jerk Chili
- 2 cans diced tomatoes (do not drain)
- 2 cans black beans (do not drain)
- 12oz. can tomato paste
- 1 cup water OR 12oz. Red Stripe
- 1 large onion coarsely chopped
- 3 green onions coarsely chopped
- 1 yellow bell pepper. coarsely chopped
- 1lb. ground Chicken
- 1lb. Pork Sausage Chorizo
- 2 jalapenos
- 2 habaneros or Scotch Bonnets
- 2 oranges
- 2 chicken broth cubes
- 1 cup water
- Jerk spices:
- 1 tbls ground allspice
- 1 tbls sugar
- 2 tbls ground fresh thyme
- 1 teas black pepper
- 1 teas cayenne pepper
- 1/2 teas ground cinnamon
- 1/2 teas ground nutmeg
- 1/2 teas ground ginger
- 1-1/2 teas salt
- 3 cloves garlic minced
- mix jerk spices together, set aside.
- In Large pot mix first 7 ingredients
- bring 1 cup of water to a boil then dissolve two chicken broth cubes. add to pot.
- remove skins from Chorizo and cook on stove. add chicken and squeeze half an orange over meat. brown mixture. add to pot.
- cut peppers in food processor then add to pot.
- squeeze remaining oranges into pot and add 3 Tbls of the jerk seasoning to pot
- Once everything's in the Pot heat till boiling. then reduce heat, cover and simmer for 1 hour....onions will turn translucent
