Blackened Salmon

  1. In a small bowl, mix all spices together well.
  2. Brush salmon fillets on both sides with butter and sprinkle evenly with the spic mixture. Drizzle the remainder of the butter on one side of the fillets only.
  3. In a large heavy skillet over high hear, cook salmon butter side down for 2 to 5 minutes. Turn fillets, drizzle with remaining butter and continue cooking until blackened and fish is done to your liking.
