Chocolate Cooler Surprise Cookies
- 1 Duncan Hines devil's food cake mix
- 2 eggs
- 1/2 cup canola oil
- 1 teaspoon vanilla
- 1/2 bag mint M&Ms
- Preheat oven to 350 degrees.
- Whisk together eggs, oil and vanilla until combined and frothy. Stir in cake mix until combined. Fold in mint M&Ms.
- Drop by rounded teaspoonfuls on cookie sheet. (I use a small cookie scoop.) Press down each cookie just slightly.
- Bake 8-10 minutes or until done. They will puff up and then fall when cooling.
- Allow to rest for about 3 minutes in pan, then remove to cool on wire rack.
- 45 minutes and you've got 3 dozen fresh-baked cookies.
- Works well with regular M&Ms or chocolate chips also. But, the mint is a real surprise. Stock up on mint M&Ms because they'll be gone after Christmas.
