Slow Cooker Pork & Hominy Stew

  1. Brown pork on all sides, seasoned with salt, in large skillet with 1 tblsp of oil. Transfer to slow cooker. Add remaining oil to skillet along with chili powder and 2 cups of chicken broth. Heat and stir while scraping up pork bits from bottom of skillet. To the slow cooker add onion, garlic and hominy. Add chicken broth mixture along with remaining chicken broth to slow cooker. Cook on low for 8 hours.
  2. When done, remove pork and shred with a fork (removing any bone depending on cut used). Return shredded pork to slow cooker and mix well. Serve garnished with avocado and cheese.
