Chicken Napoli
- 3 or 4 chicken breasts, cubed
- 1/2 cauliflower, separated into florets
- 2 potatoes, pared and diced
- 2 carrots, pared and sliced
- 2 squash (yellow and/or zucchini), cubed
- 2 onions, sliced
- 1 red or green pepper, sliced
- 2 stalks celery, cut in diagonal slices
- 1/2 tsp. pepper
- 1 (16 oz.) can tomatoes
- 1/2 tsp. garlic powder
- 1 tsp. Mrs. Dash
- 1 Tbsp. dill weed
- 1 1/2 c. water
- 2 tsp. chicken bouillon granules
- Place chicken and veggies in 4-quart casserole dish.
- Sprinkle with pepper.
- Add tomatoes, garlic powder, bouillon, Mrs. Dash and water.
- Sprinkle with dill.
- Cover tightly and bake at 350u0b0 for 2 hours.
- Stir after 1 hour.
- The flavor continues to develop as the casserole stands.
- Serves 6.
