Minestrone Soup
- 3 Tbsp Olive Oil
- 1.5 c of onions, sliced
- 1c carrots, diced
- 1c celery, diced
- 1 tbs garlic, minced
- 1/2c potatoes, peeled, cubed
- 1c green beans, trimmed/halved
- 1/2c dry cannellini or white navy beans, rinsed
- 1/2c zucchini, diced
- 1/2c shredded cabbage
- 1 14.5oz can of whole tomatoes, coarsely chopped
- 10c chicken stock or water
- 1 Tbsp fresh basil, minced
- 1 tsp, fresh oregano, minced
- t tsp fresh thyme leaves
- 1 tsp, fresh italian parsley, minced
- salt & pepper
- Heat olive oil in a large soup pot. Saute onions 10 mins over medium heat.
- Add garlic, carrots, celery, potatoes, green beans, zucchini, cabbage, and saute for 3-4 minutes.
- Add tomatoes, chicken stock, beans and herbs.
- Simmer 1.5 hours until beans are tender. Salt and Pepper to taste.
- Add cooked italian sausage for a heartier version.
