Subzi Tikki (Vegetable Patties)
- 3 tablespoons oil
- 3 small onions, diced
- 2 tablespoons ginger, minced
- 1/2 teaspoon turmeric
- 1/2 teaspoon garam masala
- 1-1/2 teaspoon salt
- 1/4 teaspoon red pepper
- 2 green chilies, chopped
- 1 medium tomato, pureed
- 7 ounces green beans, diced
- 3 ounces green peas
- 3 tablespoons cilantro, chopped
- 4-5 cashews, chopped
- 1 tablespoon vinegar
- 4 medium potatoes, boiled and mashed
- 2 slices white bread, trimmed, and soaked in water for 3-5 minutes, well squeezed
- 1 egg, beaten
- 1-2 cups fine bread crumbs
- additional oil for frying
- chutney/ketchup
- To make the filling, fry onions in 3 tablespoons oil until light brown. Add the ginger and garlic, and fry 1-2 minutes. Add the turmeric, garam masala, pepper, salt, and chilies, and cook for 2 minutes. Add tomatoes and cook for 5 minutes. Add the beans and peas, and cook until tender. Add cilantro, nuts, and vinegar. Mix well and set aside to cool.
- Mix potatoes and bread thoroughly and knead well. Form into patties in your palms. Place the filling, enclose fully, and carefully flatten into patties. Dip in egg and bread crumbs. Chill 30 minutes or longer. Pan-fry patties in heated oil and drain. Garnish as desired and serve with mint chutney or peppered ketchup.
