My Favorite Fish Recipe

  1. Heat grill to medium.
  2. In a small bowl mix sugar, ground pepper, salt and lemon zest.
  3. Lay filets on aluminum foil (skin down if present)
  4. Brush with honey until thinly coated across length of filets.
  5. Sprinkle powder mix evenly across filets.
  6. Squeeze lemon juice in a circle around filets.
  7. Place 1 tsp of butter on top of each filet.
  8. Fold aluminum foil to create a packet around fish.
  9. Place on medium grill for 15 minutes (longer if thicker filets). Flip packets and grill additional 10 minutes.
  10. Open packet and serve. Juice in packet can be poured over filets for added flavor.
  11. ***This recipe can also be cooked in the oven at 300.
