Orzo And Vegetable Surprise Salad
- 2 qts water
- 1 tbsp salt
- 1 1/2 cups orzo
- 1 tbsp extra virgin olive oil
- 1 (5 oz) pkg long grain & wild rice with seasonings
- 1 (3oz) pkg slivered almonds
- 1/2 large red pepper, diced small
- 1/2 large yellow pepper, diced small
- 1/2 purple onion (diced small)
- 1/2 cup raisins or craisins
- 1/4 cup finely chopped basil
- 2 tbsp finely chopped fresh parsley
- 4 oz (or more to taste) Greek Feta Yogurt Dressing (I buy Wegman's brand here in upstate NY)
- Salt and pepper to taste
- In a large pot, bring water to a boil. Add the 1 tbsp salt and orzo. Cook until tender (per directions on box). Drain the orzo and immediately toss with 1 tbsp of olive oil. Cover and cool completely in the refrigerator, up to 24 hrs.
- Prepare the long grain and wild rice according to package directions. Let cool.
- Combine almonds, peppers, onion, raisins (craisins), basil, parsley, cooled orzo, cooled long grain and wild rice and Greek Feta Yogurt dressing.
- Serve at room temperature (I prefer cold) in a large bowl, family style, or divide among individual serving plates.
