Cabbage-Burger Bake
- 1 small head cabbage, chopped
- 6 slices bacon
- 1 medium onion, chopped
- 1 c. uncooked rice
- 1 1/2 lb. ground beef
- 1 tsp. salt
- 1/8 tsp. pepper
- 1 qt. tomato juice
- 1 pkg. spaghetti sauce mix
- Chop cabbage (about 8 cups).
- Spread half in shallow baking dish, 13 x 9 x 2-inch.
- Saute bacon just until fat starts to cook out.
- Remove and drain; set aside.
- Stir onion and rice into drippings in pan.
- Cook, stirring constantly, until onion is soft and rice is lightly browned.
- Spoon over cabbage in baking dish. Brown hamburger and sprinkle over rice mixture.
- Sprinkle with salt and pepper.
- Top with remaining cabbage.
- Heat tomato juice with spaghetti sauce mix to boiling.
- Pour over cabbage, stirring so sauce flows to bottom.
- Top with bacon; cover.
- Bake at 400u0b0 for 50 minutes.
- Uncover and bake 10 minutes more to crisp bacon. Makes 6 servings.
