Quick Cheese Pizza

  1. Mix flour,yeast, and salt in a large mixing bowl using dough hooks. Add the water/oil mixture and knead at a low speed for 5 min. Preheat oven @ 450*. Make sure the flour is completely mixed in. You may want to stop the mixer and hand knead it just to check it. (Please use caution with the mixer.)The dough should be soft. Place dough in a bowl with a little bit of flour in the bottom. Cover with a clean dish towel and let it rest for approximately 10 min. It will double in size very quickly.
  2. Divide dough in half and place 1 half on a floured surface. Keep the other one covered in the bowl OR place in a large ziplock bag with a little cooking spray to make later.Be sure to sqeeze all the air out of the bag. On a floured surface punch the dough down and flatten with your hands. Using a rolling pin, roll out the dough to fit 1 inch beyond the edge of your pan. A pizza pan gives the best results because it has holes in it but a rectangular cookie pan works fine too. I have used both a 14" diameter pizza pan and a 10"x14" cookie pan. More importantly be sure to lightly spray with cooking oil. Roll the dough onto the rolling pin and lift up onto pan "rolling it" onto the pan as centered as you can. Using your fingers roll the edges in as you turn the pan till you go all the way around. Then go around again, this time using your thumb, press the edge of the roll into the edge of the pie where the sause goes up to. Pour 5 oz. of pizza sauce in the middle and using a soup ladel evenly spread the sauce up to the edge. Sprinkle the mozzerella cheese evenly. Bake @ 450* for approx. 15 min.
